Most Popular Recipes of 2011 and Some of My Favorites

I started this blog in July of 2010, rx but I didn’t post regularly and certainly not about food. My first food-related post was in May of 2011…only 7 short months ago! I can’t believe how much I’ve learned about cooking, baking, food photography, and blogging in such a short time. I’m so thankful for all of you guys, my readers, who have commented and visited and made this a really fun experience. I’ve so enjoyed interacting with you and with all the other food bloggers out there. I participated in the 12 Weeks of Christmas Cookie Exchange and the Great Food Blogger Cookie Swap, both of which were great experiences! I am looking forward to this new year where I can try out new recipes and learn even more! (And yes, some healthy recipes are coming your way ;).

Here are my 10 most popular posts of this year and some of my extra favorites that didn’t make the list :)

10. Delicious Marshmallow Pie

I cannot tell you how much I love this pie. I have made it four years in a row for Thanksgiving. It’s really easy to make and super delicious with its chocolatey-coconut crust and sweet marshmallow filling.

Honorable Mention: The Incredibly Long Never Ending Mural that Took Over My Room

This post was in the top ten, but since it’s not food related I suppose it’s not “official.” I was so happy to finally be able to share this mural with others because it took me so long (almost 2 years) to complete. I’m really glad it’s done and am happy with how it turned out. If any of you have questions about anything mural-related, feel free to ask me!

9. Pumpkin Deliciousness Cake

Oooohhh goodness. This cake was gooooood. It’s quick and easy to make and ridiculously scrumptious (I like that word….scrumptious :) I loved eating it with some whipped cream….it was pure goodness! Stock up on pumpkin and make this soon!

8. Giant Peanut Butter Candy Cookie…for One.

This giant cookie was fun to make and very customizable (add whatever mix-ins you want!). I made it one night when I needed something sweet and this was the perfect thing. It makes one (giant) cookie that I ended up splitting into 4 pieces and sharing with my family.

7. Pumpkin Pie Dip

I cannot talk about this dip enough! I made it for Christmas and we had a lot leftover. Yesterday I just ate it spoonful after spoonful. It’s quick to make and you can easily use low-fat ingredients. If you’re having a New Year’s Eve Party and are making appetizers, I would definitely recommend this pumpkin pie dip!

6. Minty Kiss Brownie Bites

These brownie bites could not be simpler to make. I brought them to a party at school and they were very popular! You can use any type of kiss you want which is a good way to take advantage of any seasonal kisses!

5. Oreo Truffles

Ever since I tried these 4 years ago, my family has been making them every Christmas. They are fun and easy to make and are honestly one of the tastiest treats I have ever had. I don’t know why we only make them in December…I’ll have to change that! If you’ve never had these, you have to make them! Your life will never be the same <—possibly a slight exaggeration.

4. Pumpkin Chocolate Chip Cookies

These cookies are very different from other cookies as they have a more cakey texture. But they have a really delicious flavor and have tons of chocolate chips. I think they get better as they age and enjoyed eating them with ice cream :)

3. Chocolate Chip Cookie Dough Cookies

These cookies are incredible! I love eating cookie dough (raw eggs blah blah blah) and these cookies let me do that in cookie form! The outside of the cookie is soft and melts in your mouth while the inside is underbaked and tastes like raw cookie dough! They’re so easy to make, too, that you really have no excuse to not make these soon :)

2. Nutella Swirl Brownie Bites

I had nutella for the first time in 3rd grade at my church and I fell in love. My grandparents now keep us stocked with nutella (we get so much for Christmas every year that it’s impossible to get through it all! We now have one giant jar and 3 full normal-sized jars…not that I’m complaining ;). These brownie bites were very popular! The combination of chocolate and nutella is just too much to resist.

And drumroll please…the number one recipe of 2011 was….

1. Mini Peanut Butter and Nutella Cheesecakes

Woah! I am shocked! I posted this recipe two days ago and it’s already number one on my blog! And for good reason, too. These little cheesecakes look so cute. I made half of them nutella and half peanut butter and they were both amazing! This is the perfect treat to bring to a party or just make for yourself :)

Thank you all for making those recipes so popular! Now here are my top 5 recipes that didn’t make the list :)

5. Dreamy Apple Pie

My mom makes this for Thanksgiving and I love it- it’s the best apple pie I have ever had. The crust is perfect and there is a crumbly tasty topping…oh and the apples are good, too ;)

4. Oatmeal Raisin Cookies

I am such a chocolate lover that I never expected to love these oatmeal raisin cookies as much as I did! The texture was soft and fluffy with the perfect flavors. I want to make these again…maybe with chocolate chips instead of raisins ;)

3. Peanut Butter Pretzel Chocolate Chunk Cookies

I am slightly obsessed with combination of chocolate and pretzels and these cookies were one of my favorite things I have ever made. The cookies were soft and delicious and the chocolate and pretzel add-ins were incredible. Oh yeah! I also loved these Chocolate Chip Cookie Dough Bars with a Pretzel Crust…so many recipes to share!

2. Pumpkin Donut Holes

Ok the picture for these aren’t anything impressive, but these tasted incredible. Now I really want to make them again! They’re perfect warm and rolled in lots of cinnamon and sugar.

1. Heavenly Cinnamon Rolls

These are, I think, the best thing I have ever made. I would eat these cinnamon rolls every day for every meal if I could ;) They are so buttery, fluffy, and sweet. I am positive that these are a new family favorite for birthdays and other special occasions :)

Oh goodness! I totally forgot about my real-food recipes! Ok this post is getting really long so I’ll just link to them. These dinner recipes are all really tasty. Promise.

  • Cajun Chicken Pasta– This has now become a staple in my family. It tastes better than a lot of pasta you would get in a restaurant!
  • Italian Chicken Soup– I want this soup..like now. It’s super hearty and delicious…perfect for these winter months!
  • Creamy Chicken Enchiladas– These are also a family favorite. They are really tasty and easy to make!
  • Potato Wedges and Veggies– These is a really healthy recipe! I ate it when I was on the Daniel Fast and it is really delicious.
  • Taco Pasta– Hamburger Helper on steroids…it’s so good. Trust me.

Christmas Recipe Round-Up

I love the food around Christmas. For my family’s Christmas dinner, sildenafil we have ham, Swedish meatballs, mashed potatoes, sweet potatoes, rolls, green bean casserole…basically all the things we have at Thanksgiving except we swap turkey for ham, add the Swedish meatballs, and take away the stuffing. Now that I’m reading a lot of food blogs, I’m finding that not everyone does a big meal like this on Christmas…some people do big meals on Christmas Eve or have other traditions, like Mexican food, on Christmas. Interesting! I thought everyone had a meal similar to Thanksgiving on Christmas Day. What does your family do?

Well no matter what you eat for dinner on Christmas, you definitely need to finish the day off with some tasty desserts! Here are some of my favorites that I have made this year.

1. Marshmallow Pie

I know pie is traditionally eaten at Thanksgiving, but this is one of my all-time favorites. It’s very easy to make and I haven’t met anyone who didn’t absolutely love it. Definitely one to think about for your Christmas desserts :)

2. Nutella Swirl Brownie Bites

Oh goodness. Brownie+nutella=heaven. These are great because they’re really easy to make- you can use a brownie box mix to save time and just swirl nutella on the top. If you’re going to anyone’s house to celebrate or any parties, these would be really easy treats to bring.

3. Oreo Truffles

My family always makes these around Christmas…I think we’ve made them four times already. They are insanely easy to make and one of the best-tasting things I’ve ever had!

4. Pumpkin Deliciousness Cake

Are you guys over pumpkin yet? Good. Me either. I stood in the kitchen eating piece after piece of this cake..it was just that good. It’s really easy to make (even though I kept messing up when making it!) and tastes aaamazing!

5. Chocolate Chip Pretzel Bars

Chocolate chip cookie dough + pretzel = heaven. The pretzel crust is buttery and salty and the chocolate chip cookie is gooey and sweet. This is the treat I mailed for the Great Blogger Cookie Exchange and loved how they tasted!

6. Chocolate Chip Cookie Dough Cookies

These are cookies that taste like cookie dough. I’ll wait while that sinks in. Yep that’s what I said. The outside is like a soft, tasty chocolate chip cookie while the inside tastes like raw cookie dough. They’re incredibly simple to make and they are sure to impress everyone!

7. Peanut Butter and Pretzel Chocolate Chunk Cookies

Keeping with the sweet and salty theme, these are, in my opinion, some of the best cookies I have ever made. They’re really easy to make, and you can add in whatever your heart desires! But I would recommend chunks of Dove chocolate and pretzel pieces. Mmm :)

8. Oreo Stuffed Chocolate Chip Cookies

These cookies really have the “wow” factor. Everyone is amazed that a chocolate chip cookie is wrapped around an oreo! Make these perfect for the holidays by using red oreos.

9. Chocolate Cupcakes with Peanut Butter Frosting

Oh goodness. These mini chocolate cupcakes with peanut butter frosting were insanely good. I used my favorite chocolate cake recipe for the cupcake, and a really tasty peanut butter filling. They’re adorable, especially when topped with a chocolate chip, and kids will be sure to love them!

10. Minty Kiss Brownie Bites

Take advantage of your favorite holiday limited-edition Hershey’s kisses! I used mint truffle kisses for these super simple brownie bites. Again, make these a speedy treat by using a box mix and placing a kiss on the top.

Tonight my sisters, grandparents, and I are doing our traditional Christmas Eve Eve celebration. We all get in the car in our PJs, drive to Sonic, eat dinner, and then drive around and look at all the pretty Christmas lights. It’s a really fun tradition :) Happy Christmas Eve Eve everyone!
